8 slice of bacon – grilled and cut up
8 large tomatoes – cooked down , knob of butter and salt and pepper
1 -2 diced peppers – red , yellow , orange
2 onions – chopped
7 oz arborio rice
1 pt ham stock
2 oz parmesan
Cook oinons and peppers in wok/large frying pan – 5 mins
Gradually add the stock and tomatoes, one cup at a time for 15 – 20 mins
If you cook it too fast the rice will remain hard.
When rice is “al dente” stir in 2oz paresan.
